Healthy Dip Recipe - Low Calorie Spinach Dip

Low Calorie Spinach Dip Recipe

Ingredients

10 oz fresh baby spinach
1 cup plain, fat free yogurt - drain excess liquid
4 oz fat free cream cheese, bring to room temperature to soften
1/4 cup reduced fat Parmesan cheese, grated
1 clove garlic, minced
1/4 cup scallions, finely chopped
1 Tbsp. fresh lemon juice

Lightly steam spinach until just wilted, then put it in a colander and drain all of the extra liquid from it.

Chop the spinach into fine strips and put into a medium bowl.

In another bowl, combine yogurt and cream cheese, blending until smooth. Add this to spinach.

Stir in remaining ingredients and blend well.

Refrigerate until ready to serve.

Yield 2 cups. Serve with whole wheat crackers or low carb whole wheat bread.
