Coconut Oil Recipes and Tips for Use

Since healthy coconut oil is great for weight loss, lowering cholesterol and more, it makes sense to use it in cooking and baking as often as you can. Scroll down for a tasty recipe for coconut oil granola and coconut chicken.

Here are some tips for using coconut oil in baking.

1. Coconut oil can be substituted for other types of oil in cooking or baking. Simply melt the coconut oil and use the same amount as called for in the recipe.

2. Since coconut oil will return to solid form if it comes in contact with cold, make sure your other ingredients are at room temperature.

3. To use coconut oil instead of shortening, combine it with an equal amount of butter. You can even use less coconut oil in a recipe than shortening. If your recipe calls for one cup of shortening, you can reduce the amount of coconut oil to 3/4 cup. Just reduce the amount of coconut oil by 25% of the amount of shortening called for.

4. Olive oil is also a healthy oil to use but is prone to damage which reduces the antioxidants when used with high heat. Coconut oil is stable enough to remain unchanged when cooking or sauteeing over high heat.

Coconut Oil Granola

5 cups old fashioned oatmeal
1/2 cup wheat germ
1 cup non-fat dry milk
1 cup sunflower seeds
1 1/2-2 cups any type of dried fruit, chopped into small pieces
1 cup organic flaked coconut
1 cup chopped walnuts, peanuts or almonds-better yet- mix several kinds of nuts
3/4 cup coconut oil, melted
1 cup honey

Place all dry ingredients together in a large mixing bowl and combine. In a small pan, heat the coconut oil on low heat and stir in honey. When combined, pour slowly over granola, mixing well.

Spread the mixture on oiled baking sheets.

Bake at 300F for about 10 minutes, then turn granola over and continue baking for an additional 10 minutes.

Once the coconut granola is cool, store it in an airtight container.

Coconut Chicken Recipe

Ingredients

2 tbs melted coconut oil
2 tbs garlic, minced
3/4 onions, diced
8 chicken breasts, boned, skinned, pounded to 1/2" thickness
1/2 cup coconut milk

Set coconut milk aside. Saute onions and garlic in a heavy skillet. Adding chicken, brown it slightly. Watch garlic carefully so it doesn't brown.

Garlic Chicken Sauce Ingredients:

3/4 cup white vinegar
2 1/2 cups water
1 chicken bouillon cube
2 cloves garlic
1/2 tsp black pepper
1/4 tsp paprika
1 tsp oregano
1 tsp ground bay leaf
1/2 cup soy sauce (low sodium)
1 1/2 tbs sugar

Place all ingredients into a blender and combine, then add to chicken in the skillet. Cover and cook on simmer, cooking until chicken is tender. Stir occasionally while cooking.

Add 1/2 cup coconut milk to simmering chicken. Cook for another 20 minutes. Place on serving plates and ladle extra sauce over it.

Yields 8 servings.

Superfood Coconut Muffins

1 cup whole wheat flour
1/2 cup old-fashioned oats
1/4 cup organic sugar
2 tsp baking powder
1/2 tsp salt
1 egg
1/4 cup coconut oil melted
3/4 cup milk
3/4 cup blueberries, peaches, coconut, jam or (frozen fruit may be used if thawed first)
1/4 cup flaked coconut
12 muffin cups (paper)

Heat oven to 400 degrees F. Line muffin tin with paper liners.

Combine flour, sugar, baking powder, oats and salt in a mixing bowl and blend well.

Blend together one egg, the milk and oil in a small mixing bowl. Make sure the egg is at room temp to keep your coconut oil from resolidifying.

Chop up fruit for filling and set aside.

Create a small hole in the middle of the dry mixture. Pour egg mixture into the hole. Blend until well combined but leave a little lumpy.

Add fruit and coconut and blend slightly. Pouring mixture into muffin papers, fill to about 3/4 full.

Bake for 20 minutes.

Yield one dozen muffins.

How to Shop for Organic Products on a Budget

Think organic products are more expensive? Think again! There are simple strategies you can use to save money and shop organically too.

1. Be sure you are really getting what you pay for.

When buying organic produce, make sure it is being displayed separately from the regular produce. One little-know-fact is that store owners are legally required to display organic product where it will not be contaminated by water run-off created when conventional produce is misted. This run-off could contain pesticide residue.

2. Don't be mislead by the label "natural." Sometimes these products are mixed in with organic products but the label "all natural" doesn't mean a product is organic. Check the labels for additives and chemicals.

3. Make sure the product is USDA certified organic and always check labels, even if the product says it is organic. Laws and restrictions are not well enforced by the USDA.

Some tips from ShopSmart Magazine to save money on organics:

1. Search the Internet for coupons for organic brands. Check the websites for major brands like Stonyfield Farm, Earthbound Farm and Health Valley offer coupons.

2. Try discount stores such as Walmart, Sams Club and Costco. I've found many Costco brand organic products there under the Kirkland brand that really DO save you money. Check between retailers to see who offers the best deal.

3. Check out the bulk bins of your local grocery store for organic products. Bulk bins are usually cheaper.

4. Look for store brands of organic products. Krogers now has Kroger's Private Selection organic which costs less than name brands. I've tried many of Kroger's organic products and been impressed with the flavor and quality. Whole Foods offers its Whole Foods market's 365 Organic Every Day Value and Safeway offers O Organics.

5. Join a food coop. I belong to an organic food coop where I get a large bin of fresh fruits and veggies twice a month for $50 each. All is certified organic and much of it is locally grown, at least grown in my state, which is Texas. My coop also offers bulk orders yearly on organic berries, fish and other specials. With group buying power you can save money. Check Local Harvest for more information on a coop in your area.

6. Buy bulk organic produce in season when it's the cheapest and either can or freeze what you can for later. Check for local U-Pick farms that are organic or check to see if local organic farmers offer memberships for their products.

Looking for an Organic Toothpaste?

To substitute coconut oil for vegetable oil, use the same amount of oil the recipe calls for. Melt the coconut oil, making sure that the other recipe ingredients are at room temp as cold eggs, milk or other liquids might cause the coconut oil to solidify.

  • To substitute coconut oil for shortening, try using a combination 1/2 butter and 1/2 coconut oil.
  • The amount of coconut oil can be reduced by about 25%, so in a recipe that calls for for 1 cup of shortening, you can use 1/2 cup butter and 3/8 cup of coconut oil.
  • If you would like to use all coconut oil then subsitiute 3/4 cup of coconut oil for 1 cup of shortening.

  • Add coconut oil to your daily smoothie
  • Use coconut milk in place of cow’s milk or soy milk in puddings, chowder and soup and gravy, to name a few.
  • Add dried coconut to granola or other recipes

Flu Vaccine Worst in 10 Years! What to Do?

This news came out today - the 2007 flu vaccine was only 44% effective against the strains of flu that people actually got. So how can you protect yourself against the flu if the vaccine doesn't work very well?

The answer to that is easy-boost your immune system to optimum levels and you avoid, not only the flu, but colds and other illnesses. Possibly even diseases like cancer.

I haven't had a flu shot in years and haven't had the flu either. I only very rarely even catch a cold. I put this down to having a super strong immune system and focusing on health.

I'll put some practical steps below to boosting your immune system but one of my "secrets" is that I focus totally on health. I don't ever say things like "The flu is bad this year, I'll probably catch it." "So and so has a bad cold so it's probably just a matter of time before I get it too." "I'm not feeling very well today, I'm probably getting that thing that's going around."

Like germs and illness is making a circle and I'm sure to get caught up because "
everybody's getting it."

When it comes to getting sick, I don't talk about it, I don't think about it. I think instead, "My immune system is super strong and it takes care of me, no matter what."

Besides positive thinking, here are some positive actions I take to boost my immune system:

1. Start with basics- I get 7-8 hours of sleep every night and I drink lots of water to keep my system flushed out.
2. Eat lots of fruits and veggies! I know you've heard that before but it works. To help me get my 5-9 servings of fruits and veggies, I start my day with a green tea smoothie, made with a banana, yogurt, blueberries and a serving of Shakeology. 3. I am a big believer in detoxing to keep my body clean and functioning in peak condition. For that I use Holy Tea a safe, gentle detoxing tea that you can drink every day.

If I do feel "something coming on" I swing into action.

1. I take
Echinacea herbal extract several times a day.
2. I step up my detox and drink more water.
3. I add
Cayenne pepper to everything I eat. According to Chinese medicine, if you have a cold or respiratory condition, you need to heat up your body. I make this Cayenne pepper lemonade recipe and drink it all day.

Warm lemonade:

1 cup boiling water
Squeeze in the juice of 2 lemons
Honey to taste
2 dashes of cayenne pepper

Honey is also a natural anti-viral.

I make a batch of
Tzadziki dip and eat it several times during the day. Fresh garlic is a natural antibiotic.

Tzadziki (Greek yogurt dip)

32 ounces plain regular yogurt, not low fat – purchase yogurt without additives
1 large English cucumber, peeled and shredded
5 cloves garlic, minced
3 tablespoons distilled white vinegar
1/4 cup extra virgin olive oil
Salt to taste

Directions for
Tzadziki

1. Place a cheese cloth or double layer of paper towels over a colander. Place yogurt on paper towels with a bowl underneath and strain the yogurt 6 hours in the refrigerator, or over night. This will take out all the excess water and leave a thick, creamy yogurt for your
Tzadziki.
2. Dice up garlic and cucumber and drain as much excess liquid from them as possible.
3. In a large bowl, mix together all ingredients until a thick mixture has formed.

Serve with crackers, French bread or veggies as a dip. Also use in Greek recipes calling for
Tzadziki.

How do you Create Health if You're Sick?

It's one thing to do what you can to be healthy if you don't have any real health problems but what about if you have a serious illness or disease?

About a year ago, I noticed some strange tingling sensations in my body. I'd had restless leg syndrome for a long time but it got worse. All of a sudden, I was having strange symptoms. I started researching...This couldn't happen to me, I thought, I'm SO healthy.

All the research I did pointed me to very dire things like MS, for instance. I read some forums and discovered many had strange, unaccounted for symptoms. Was I destined to wander in forum hell, discussing my sorry symptoms, looking for a "cure?"

What I discovered is that there is a terrible trap out there waiting to grab the unwary. You research an illness or disease and suddenly you find yourself wanting to join a support group, you want to be one of and identify with, those who suffer as you do. You can pick up the cloak of this disease and wear it proudly.

Did I want to do that? I almost did it, tell you the truth. But I caught myself in time.

There is a book called The Science of Being Well by Wallace D. Wattles. (click on the link for the free ebook) Wattles also wrote the book, The Science of Being Rich, which was one of the books the Secret was based on.

In this book he says, to be well, think health! If you have an illness or disease, don't think about it, don't talk about it, don't focus on it. Only let thoughts of health enter your mind, no matter what "reality" tells you.

He also recommends not going to a doctor, which I do not recommend however. My first practical step toward health was to visit a neurologist. He did some tests and informed me he had no idea what was causing my symptoms but I didn't have any of the serious things on the list. He said he could give me medication to dull the symptoms but he admitted no medication would "cure" me, only cover the symptoms.

At one point, I did decided to try his medication but guess what? It didn't do a thing. After 3 weeks he told me we could try other meds or just learn to live with it.

That was fine with me. I decided to see what I could do to heal myself and I never went back to him.

So what have I done? I decided to follow Wattles' advice. Except for telling my story here, I don't think about it, don't talk about it, don't focus on it. I feel great! I'm never sick, never worried about my health, never dreading the future and getting old and incapacitated. Has this worked? You bet it does!

This week I had two more big examples of just what it takes to improve a deadly health problem. About 3 years ago, my father, who is otherwise in good health for someone 84 years old, was told he had a cancer of the blood. This cancer is caused by the bone marrow no longer producing the platelets to clot the blood. The usual progression is low energy, bruising all over the body and eventually needing weekly blood transfusions.

My mom has always been very proactive when it comes to health. She asks me to research any and all health issues that come up and they try to do whatever they need to to over come things naturally. My dad started eating iron rich foods and drinking blueberry juice every day and eating blueberries, a superfood full of antioxidants. Everything we could come up with to build up blood was what my dad started doing.

Over the next 3 years he went from going to the blood oncologist every 3 months to check blood counts to going every 6 months to being told his blood counts were near normal. The doctors are amazed! He is like the poster child for this blood disorder and they've never actually seen anyone get better from it.

So, have the doctors been writing him up in medical journals? Have they even asked him if he's doing anything to cause such unheard of improvements? No, they have not. They just continue to be amazed at his getting better.

A friend of mine, a very nice lady who is 76 years old, suffered a heart attack about 2 years ago. Did she give up and take to her bed? No, she decided to join a seniors exercise class 5 days a week. This past week, her cardiologist told her she has healed the damage to her heart with exercise! She now only has to go back to see him every year, instead of every 3 months.

So what's the moral here? One is that usually the doctors don't tell you anything you can do to help yourself. If, as in the case of my dad, there is no magic pill to pop, they tell you to go home and live with it. If you do help yourself, they don't bother to ask what you're doing so they can pass it on to others. They just think you are a "miracle".

My mom actually lowered her cholesterol from 250 to 190, using only cinnamon. For the first time in 35 years, her cholesterol was normal. Her doctor DID ask what she was doing and she told him she was eating cinnamon but he didn't bother to comment on it-lol.

The two individuals I'm writing about are elderly and they managed to make a real difference in their health. Just think, if you are younger what you could do to improve any health condition you have?

Whatever health problem you might be facing, research ways to improve it yourself though health improvements. DO NOT focus on the problem, Focus on the Solution. Anything natural you can do can be added to whatever the doctor is suggesting too and certainly won't hurt you.

Don't Worry About the Economy!

Economic bad news seems to be all around us right now. How do you feel about the economy? Is your family personally hurting or have you found ways to cope? Do you feel like the economy is getting worse or do you think the media is magnifying the bad news?

What I believe is that if you worry over bad times, you are only creating more of that in your own life. You might say, "I have all these bills I can't pay and that's a FACT." "Everything is costing more and that's a FACT." How do you argue with FACTS?I believe that so called facts are only what you believe them to be and they are only true because you believe them to be true for you. These things may be a fact in some people's lives because they believe that is what they are stuck with but it doesn't have to be true for YOU.

The fact is, altho you may have bills you can't pay RIGHT NOW, it is not a fact that you are stuck with this as a truth unless you want it to be.

Sure, some things are costing more but some things are not costing more. Are there substitutions you can make to products that are less costly, say using store brands? Are you clipping coupons, shopping sales? The other day, I saved $20 at the grocery store with a combo of coupons and selecting certain products the store had on sale. The deal was, buy 10 of the sale items and get $5 off your grocery bill. Since these were products, I already use, I bought 20 items and saved $10 right there.

The fact is, there are always opportunities out there and some people do thrive in all sorts of economic times. Some jobs seem pretty recession proof. Fear freezes you into inaction, while proceeding with confidence in yourself and what can be true for you inspires all sorts of plans and ideas to create the life you want.

What would it cost you to see the future with a positive attitude? Can you let go of the fear or are you clinging to it? How is the fear helping you? Is it helping you?

Sometimes fear keeps you from running up credit cards or making a purchase you know you can't afford. However, you don't have t make those decisions out of fear. Why not say, "When the time is right, I will have the money for those things I want to purchase?" Just try to view it as a practical step to getting where you want to be, not as a decision inspired by fear.

If you let go of the fear and open yourself to new ideas, you may be amazed at what happens.

Perhaps you've had a dream that you put on the back burner and a way will suddenly come to you as to how you could accomplish it. Perhaps you'll stumble across a business or product you'd love to promote or be part of. Maybe you'll come up with an idea for a website or blog that could earn you money.

Here are some things you can do to help you let go of fear:

  • Turn your back on toxic conversations about the economy. Don't take part in the gloom and doom thinking.
  • Create a plan. Action and empowerment turn fears into positives. What things can you do to improve your situation?
  • Think about and focus on what is good in your life. Be grateful for what you have, no matter how small it may seem at the moment. Focus on the good and the good will grow in your life.
  • Visualize the life you want and return to that vision over and over through out the day. See it as real. Know that this is what your life will be.
  • Take the negatives out of your speech. Don't talk about the "bad" economy, don't complain, don't focus on those things. Instead, look for positives to focus on.
  • Try meditating to connect with your inner self. If you don't feel like you can meditate, at least steal 5 or 10 minutes per day to yourself to quiet your mind and focus on pleasant things.
  • Try deep breathing if you do feel fearful. Focus on relaxing your body and you mind.

Just remember, Whatever you focus on is what grows. What are you focusing on?

Law of Attraction-What to to When You're Stuck!

Recently, I found myself sliding back into my old ways of negative thinking and felt that the Law of Attraction just wasn’t working for me very well. Certain areas of my life just didn’t seem to be going the way I wanted them to and I didn’t know what to do. What I wanted was some direction in what I should do with my life and it just wasn’t coming.

Then a couple weeks ago, I took a trip with my husband and daughter to Washington, DC. We live in Texas, and altho I spent quite a bit of time on the East Coast when I was younger, I hadn’t been there for 20 years. Let me add too, that we never take vacations that aren’t related to visiting relatives or going to softball tournaments.

While we were gone for those 6 days, I decided to put everything in my life on hold and just enjoy the moment - being with my husband and 21 year old daughter, seeing new sites (much had changed in DC since my last visit), having a great holiday with no cooking, no cleaning, no housework, no worries over jobs and “what should I do with my life?”

While we were gone, I decided that when I got home, I would start all over again at the beginning with the Law of Attraction. I got out books I’d read that inspired me, like some by Wayne Dyer, I bought his new book too on the TAO and also the Abraham Hicks new book on The Amazing Power of Emotions. I decided not to pressure myself anymore and just observe.

When I was walking my dogs one day, I started thinking about what my life was at this moment, what I’d wanted to manifest in my life. I discovered a strange thing - many of the things I’d wanted to manifest a few months ago had come into my life but not in a way I expected so I didn’t really recognize them.

My husband and I wanted to travel but of course, money is always an issue. Well, the cost of our trip to DC was greatly offset because my husband went there for his job. He had to go there for training and we went a few days early to see the sites. We also got a nice trip to Galveston this summer, all planned by my step daughter and in the form of a family reunion, where we all shared the cost, which again made the travel affordable.

I am a freelance writer and last fall lost a very lucrative contract. Since then, I’ve been looking for something to replace this and haven’t found it. However, on my list of “how I want to live my life” was doing something to help others, having time for contemplation, meditation and yoga, etc. Altho I haven’t gotten a “job of my dreams” the past few months, my husband had gotten 2 promotions at work which put extra money into our budget.

Also, our daughter is a college student. Although she pays for all tuition, etc herself with scholarships, we had been paying things like car insurance, groceries, etc. This summer she got a very well paying part time job (talk about using the Law of Attraction!) which pays her extremely well per project and it takes only a couple days to do each one. This freed up more money for our budget.

We are fortunate in that we don’t really have money issues - however, retirement is looming!

Anyway, I realized that I had manifested what I desired, only not in the typical form of finding a well paying job for myself. With the extra money in our budget, I am free to devote more time to projects of my own that -at the moment at least - aren’t earning much money. I am further developing my health website and also starting a new one on
eco-friendly living - a topic I feel is important. On our trip to DC, I also rediscovered my passion for history and am outlining a historical novel.

This has also freed up time to help my husband’s daughter with some babysitting for her one-year-old daughter. This beautiful little girl has greatly added to my life in many, many ways and I look forward to a long and cherished relationship with her and her 4 year old brother.

I guess what I wanted to express is that if you think the Law of Attraction isn’t working, step back and take an inventory of your life. Maybe some of your dreams have manifested but you didn’t recognize them for what they are because they didn’t come to you in a way you were expecting and anticipating.

I am now trying to follow advice given to me by a friend - That once you decide to follow your path to higher consciousness, then assume that everything that happens is part of your path. Instead of seeing problems, see opportunities.

WAHM-Overcoming These Obstacles Leads to Success

There are literally hundreds of work at home opportunities out there and hundreds of people have tried one or more of them. What is the difference in being successful and failing time after time? Here are some obstacles I've overcome in my quest to work at home successfully.

Deciding what work at home biz to do

One of the biggest hurdles, of course, is finding the right biz to do. My best advice is to make a list of:

Your interests
Your passions
Your education or training
Other contributing factors

My first work at home experience, which lasted 10 years and was very successful, was having my own home daycare. My daughter was one year old when I got out of the Navy, my husband was in the Navy still and deployed a large part of the time. My past experience was being a surgical technician but I couldn't do that sort of job and be called in to work in the middle of the night with a small child. I thought "Why not take care of kids. That would be easy!"

Well, it wasn't easy at all but I went for it. I got my daycare license, which required taking training once a month, and I became a professional at what I did.

  • My interests at the time were being home with my daughter.
  • Little kids at the time were also my passion because of her.
  • I had education and training in the medical field, which was useful in building my reputation as a daycare provider
  • Other contributing factors was that a home daycare fit into my lifestyle at the time and was best of my daughter.
Your choice may not be that clear cut but here are a few options:

1. You could make something. My second home biz was selling beadwork that I made at craft fairs. It was my interest and my passion for several years.

2. You could sell something. This is the path a large number of moms take. You just have to find the product which best uses your interests and your passions. Right now I have several home businesses, all related to health and organics.

Now that we have computers, forums, chat rooms, etc, the isolation part of working at home isn't quite as bad as it once was. We can always find on-line support and friends. In fact, if you choose some sort of work at home biz make sure you have a good support system within the other members of your team. If you don't have a good team, create one.

One of the main reasons many are successful in work at home businesses is the support they find with their team. Someone has to teach you the ropes and be there to answer questions.

Another type of support you can look for if you're building a business online is networking groups. Networking groups can take a look at your website or your marketing skills and help you learn what you need to know to be successful.

Even when I had my own daycare I didn't feel isolated. I met with the same women each month for our training classes and we shared information. I also knew other daycare providers in my neighborhood because we were all in the same nutrition program so we were also able to share info and concerns. This sort of support is very important.
